Pepperpot

INGREDIENTS

2 lbs. stewing meat (pork or beef) or brisket
2 pig's trotters or cow's heel (optional) 2 lbs. ox tail
1 cup cassareep (explain this)
2 hot peppers (red) 1 inch cinnamon stick
3 heads clove
2 oz. brown sugar
2 stalks of basil
1 bunch fine thyme
1 large chopped onion
3 cloves chopped garlic
Salt to taste

METHOD

1. Clean the meat thoroughly; add lime and salt
2. Put the trotters or heel in a covered pan with water to boil. Skim the top of the pot
3. When tender, add other meat and hot water to cover
4. Add other ingredients and simmer until meat is just tender
5. Adjust flavour with salt and sugar
